Susan Baker is a professor in the Department of Food Science and Human Nutrition and an Extension specialist. She provides statewide leadership for the Expanded Food and Education Nutrition Program (EFNEP). Her work focuses on the design, implementation and evaluation of educational programs targeting limited resource audiences, as well as the training and staff development of paraprofessionals and community-based nutrition education programs.
Baker received her B.S. in home economics and food and nutrition from Meredith College in 1980. She then studied adult and community college education at North Carolina State University, earning her M.Ed. in 1994 and her Ed.D. in 2003.
